Ham and Cheese Croquettes are fried dumplings stuffed with ham and melted cheese. They are frequently served as a side dish or as a quick snack. Ideal for ham and cheese fans.

Ingredients
150g Serrano ham 150g grated cheese
1 onion
75 g of butter +/-100 g of flour +/-30 cl milk
smoked paprika, salt, pepper, nutmeg
egg, flour, breadcrumbs, and olive oil
Preparation
Chop the onion finely and cook it in a little oil.
Once the onions are transparent, add the diced ham and brown for 5 minutes.

Melt the butter in the pan. Sprinkle with flour, whisk thoroughly, and gradually pour in the milk.
To avoid lumps in the bechamel, stir constantly.
Season with grated cheese.
Allow to cool and solidify for 3 hours in a cool environment. Form croquettes, then roll them in flour, then in beaten eggs and breadcrumbs.
Cook in hot oil.
