Ingredients: 3 lightly beaten eggs plus 1 yolk
1 vanilla pod, split lengthwise and seeds removed, or 1 teaspoon vanilla bean paste
caster sugar (60g)
Whole milk 215ml
215ml double cream, grated nutmeg

STEP 1 of the Method
Preheat the oven to 150°C/130°C fan/gas mark 3. 2. With a wooden spoon, mix the eggs, vanilla extract, and sugar. Pour the milk and cream into a medium-sized dish. Grate finely over a good grating of nutmeg.

STEP 2 Make a bain-marie by filling a roasting pan halfway with water. Place the dish in the tin so that the water reaches about three-quarters of the way up the sides. Bake for 45-50 minutes, or until the center is just set with a tiny wobble. Serve warm or chill overnight in the refrigerator. Serve alongside poached fruit.
