  • 3 large egg yolks
  • 1 cup half and half cream
  • 2 tablespoons butter
  • 1 tablespoon finely grated lemon zest
  • 1 cup sour cream

Topping:

  • 1½ cups heavy whipping cream
  • 2 teaspoons powdered sugar
  • Finely sliced lemon peel, for garnish (white pith removed)

Instructions

Prepare the crust:

  1. Preheat your oven to 450 degrees F.
  2. Beat shortening and cream cheese in a large bowl with an electric mixer until fluffy.
  3. Beat in flour and salt until dough forms.
  4. Press the dough into a 9-inch pie plate, covering the bottom and sides.
  5. Bake for 9 to 11 minutes, or until the crust is golden. Let it cool.

Prepare the filling:

  1. In a medium saucepan, whisk together the sugar and cornstarch.
  2. Whisk in the half and half and lemon juice.
  3. Heat the mixture over medium heat until hot.
  4. Beat the egg yolks in a small bowl, then gradually add some of the hot liquid to temper the eggs.
