1 sweet potato (around 1 pound)
1/2 cup softened butter
1 cup granulated sugar
a half-cup of milk
2 eggs
1/2 teaspoon nutmeg, ground
1/2 teaspoon cinnamon powder
a tsp vanilla extract
1 unbaked pie crust (9 inch)

-Boil sweet potatoes whole in their skin for 40 to 50 minutes, or until tender. Remove the peel from the sweet potato by running it under cold water.
-In a bowl, mash the sweet potato. Mix in the butter using an electric mixer. Mix in the sugar, milk, eggs, nutmeg, cinnamon, and vanilla extract. On medium speed, beat until the mixture is smooth. Filling should be poured into an unbaked pie crust.Bake at 350°F (175°C) for 55–60 minutes, or until a knife inserted into the center comes out clean. Pie will puff up like a souffle before sinking as it cools.
