This Doritos cheesy chicken casserole is excellent for a family supper; it’s quick and easy to cook, and it’s sure to please everyone. In this delightful weekday supper, the crunch of the chips perfectly balances the creamy chicken and melted cheese.

A coworker gave me this Dorito chicken casserole recipe. “You had me at Doritos!” says my spouse.

Diane Blake, a Plain Chicken reader, sent this recipe. She was gracious enough to share her family’s favorite recipe with me. We had never prepared a Doritos Cheesy Chicken Casserole before, so we gave it a shot. This is one of those foods that isn’t particularly attractive but tastes fantastic. This was a lot of fun for both of us. I used rotisserie chicken meat and this came together quickly. We were both very fond of the Doritos! Chicken Legs piled extra Doritos on his plate because you can never have too much Doritos.

1 14.5 oz. box nacho cheese Lightly crumbled Doritos chips
2 1/2 cups cooked, shredded chicken
1 13.25 oz. washed and drained can black beans
1 13.25 oz. rinsed and drained can whole corn kernels
1 1/2 cups grated Mexican blend cheese, split
1 can chopped tomatoes with green chilies, 10 oz.
1 can diced green chilies, 4 oz.
1 can condensed cream of chicken soup, 10.75 oz.
1 8 oz. sour cream container
1 tbsp. taco seasoning

Directions:

Preheat the oven to 350o F and spray a 913-inch baking dish liberally with nonstick spray.
Combine the chicken, black beans, corn, 1 cup Mexican blend cheese, diced tomatoes and green chiles, cream of chicken soup, sour cream, and taco seasoning in a large mixing dish. Mix until everything is well combined.
Pour half of the lightly crushed Doritos chips into the baking dish, then top with the chicken mixture and spread it out evenly.
Bake for 20 minutes in a preheated oven.
Remove from the oven and sprinkle with the remaining Doritos and cheese. Return to the oven for another 5-7 minutes, or until the cheese is melted and bubbling.
Remove from the oven and serve immediately, garnishing with cilantro if preferred.
