Dessert doesn’t have to be fancy to be delicious; these Trisha Yearwood Apple Dumplings are always delicious and incredibly simple!!

Yum! If you know me, you know that when I acquire a new cookbook, I sit down with a giant piece of scrap paper (or a pad of post-its, but that’s more expensive) and dive in. First and foremost, this book is stunning! Glossy pages with vibrant photos…of food and family. It’s visually stunning. And, let’s face it, don’t we all eat with our eyes first?

Garth Brooks, a singer close to my heart *I’ll explain why at the conclusion of the piece, wrote the foreword. I mean, she can’t help but use a celebrity in an audience…She is one, and she is married to one…It just goes with the territory. He introduces her and the book with pride, explaining why she is so accomplished in both cooking and singing. The explanation is simple…she enjoys what she does. Isn’t that the key to achieving success in all facets of life?

2 Granny Smith apples, sliced
1 lemon
1 cup of sugar
1 stick (1/2 cup) butter
a quarter teaspoon vanilla extract
8 buttermilk biscuits, canned
4 tablespoons cinnamon powder

Instructions:
Preheat the oven to 375 degrees Fahrenheit.
Peel, core, and cut the apples into 8 slices vertically. To keep the apple slices from becoming brown, squeeze the lemon into a bowl of water and add the apple slices.
1 cup water, 3/4 cup sugar, butter, and vanilla extract in a medium pot. Over medium heat, bring the sugar mixture to a boil.

Divide each biscuit into two layers. Wrap a biscuit layer over an apple slice, gently extending the biscuit to overlap, and seal on the bottom. Place the wrapped slices in a 9-by-12-by-2-inch casserole dish, sealed side down. Over the apple slices, pour the hot sugar mixture. Sprinkle the tops of the covered apples with the remaining 1/4 cup sugar and cinnamon mixture. 35 minutes till golden brown.
