Yes, you will need to soak the beans before cooking. The traditional method is to soak the beans overnight. However, for this recipe, we have a quick soak method that only takes a little over an hour. Simply put the beans in a pot, cover them with hot water, and bring to a boil. Let them boil for 2 minutes, then cover and let them sit for an hour. Rinse the beans and add them back to the pot with the rest of the ingredients. It’s that easy!

Ingredients

To make this delicious ham and bean soup, you will need the following ingredients:

  • 16 oz bag of Great Northern beans
  • 1 large onion, chopped
  • 2 cups carrots, chopped (approximately 3 carrots)
  • 2 cups celery, chopped (approximately 4 stalks)
  • 3 cloves of garlic, minced
  • 3 tablespoons of butter
  • 1 tablespoon of vegetable oil
  • 1 ham hock (or diced leftover ham)
  • 2 cups of diced leftover ham
  • 1 teaspoon of pepper
  • 1/2 teaspoon of salt
  • 1 teaspoon of Slap Ya Mama® seasoning (optional)
  • 1/2 teaspoon of thyme leaves
  • 4 cups of vegetable broth
  • 4 cups of chicken broth
  • 1 tablespoon of all-purpose flour

Instructions

  1. Clean any debris or rocks from the beans and add them to a large stock pot.
  2. Cover the beans with hot water and bring to a boil over high heat.
  3. Boil the beans for 2 minutes, then remove from heat, cover, and let them sit for one hour. Drain the beans.
  4. While the beans are soaking, heat oil and butter in a large skillet. Add carrots, celery, and onions. Saute until tender, about 6 minutes. Add garlic and saute for an additional minute.
  5. Sprinkle flour over the vegetables, stir, and cook for another minute. Remove from heat.
  6. Add the ham hock (or diced leftover ham) to the stock pot.
  7. Pour in the vegetable broth, chicken broth, beans, diced ham, and sauteed vegetables.

3 cups hash browns, frozen
34 cup monterey jack pepper cheese, shredded
1 cup cubed cooked ham 14 cup finely chopped green onion 4 thoroughly beaten eggs
1 can (12 oz.) evaporated milk
14 teaspoon ground black pepper
12 teaspoon of salt

Directions

Grease 2 quart rectangular baking dish.
Arrange potatoes in an equal layer on the bottom of the baking dish.
Top with cheese, ham, and onions.
Combine the milk, eggs, and seasonings in a mixing bowl.
Serve with potatoes and cheese.
Refrigerate for the night.
Bake for 40-50 minutes, or until set.
