1 bag (30 oz.) frozen diced hash browns
1 box of 32 oz chicken broth
1 can (10 oz) cream of chicken soup
1 pound cream cheese (8 ounces, not fat-free)
3 ounces bacon bits
1 cup cheddar cheese, shredded
season with salt and pepper to taste
Directions:
Place the potatoes in the slow cooker. Combine the chicken broth, cream of chicken soup, and half of the bacon bits in a mixing bowl. Season with salt and pepper to taste.
Cook for 8 hours on low, or until potatoes are soft.
Cut the cream cheese into small pieces one hour before serving. Place the cubes in the slow cooker. Mix many times during the hour before serving.
