There are times when you crave pie but don’t want to go to the hassle of creating pie dough. The cubed butter being chopped in, the ice water being spooned in methodically, flour all over the worktops as you massage the dough out with a rolling pin… Some days it appears to be meditative, while other days it appears to be a nuisance.

It has all of the ease of a store-bought crust, but you have complete control over the ingredients. You can, for example, use any oil you like! Peanut, olive, avocado, canola… even melted butter could be used. Everything works. It’s delicate and unexpectedly flaky.

INGREDIENTS
1/2 cup oil of choice 2 cups all-purpose flour
3 tablespoons cold water 1/2 teaspoon salt 1/4 teaspoon baking powder.

PREPARATION

  1. Lightly coat a 9-inch pie dish with nonstick cooking spray. Place aside.
  2. In a large mixing basin, combine the flour, salt, and baking powder.
  3. Combine the oil and water in a mixing bowl. Shape into a ball.
  4. Press the dough ball into the bottom of the prepared pie dish, spreading it out to the sides. Push it evenly across the bottom and up the edges of the dish with your knuckles or the bottom of a glass.
  5. Crimp or flatten the top edges with fork tines, fill your favorite filling, and bake according per pie instructions.
