Farmer’s Casserole is a delicious way to start the day! It’s a fantastic breakfast that mixes great ingredients in each bite! My mother brought this recipe with her when they came to visit for Thanksgiving, and we prepared it on their last morning. It was a big hit with everyone! Potatoes, eggs, cheese, ham, and onions combine to make an incredible dish that I will make again on Christmas Day. It can be made the night before and baked in the morning. I love that I won’t have to spend additional time in the kitchen on Christmas morning, allowing me to spend every moment with my family and enjoy seeing my children open their gifts and discover what Santa brought them!

We spent a lovely week with my parents, and it is always hard to see them leave. On their last night here, we showed the kids their mommy in her large white dress, tears streaming down her cheeks, dances, speeches, and their “young” mom and dad getting married! My children were flower girls and ring bearers in my cousin’s wedding in October and have been eager to attend their parents’ wedding. We hadn’t seen the recordings in many years, and it was wonderful to relive all of those wonderful moments from ten years ago. I am eternally grateful for my wedding day, spouse, two beautiful children, our parents, families, friends, and our incredible life and home in Arizona!

Ingredinet

3 cups hash browns, frozen
34 cup monterey jack pepper cheese, shredded
1 cup cubed cooked ham 14 cup finely chopped green onion 4 thoroughly beaten eggs
1 can (12 oz.) evaporated milk
14 teaspoon ground black pepper
12 teaspoon of salt

Directions

Grease 2 quart rectangular baking dish.
Arrange potatoes in an equal layer on the bottom of the baking dish.
Top with cheese, ham, and onions.
Combine the milk, eggs, and seasonings in a mixing bowl.
Serve with potatoes and cheese.
Refrigerate for the night.
Bake for 40-50 minutes, or until set.
Allow for a 5-minute rest.
