INGREDIENTS
1 pound white fish (cod, tilapia, or pollock) works well!
34 cup almonds Flour
seasoned with salt & pepper
2 to 3 teaspoon Creole Seasoning by Tony Chachere For gluten-free or paleo options, use paprika or your favorite seasoning combination.
2 beaten eggs
Oil for frying (enough to cover around 12 inch of the bottom of your skillet) I used approximately 12 cup beef tallow.

INSTRUCTIONS
In a heavy skillet, heat the oil over medium-high heat. Preheat an electric skillet to 375 degrees F.
In a rectangular plate, arrange the well-beaten eggs. Then, combine the almond meal and Tony’s (or other seasoning) and spread it out on a plate or shallow dish for dipping the fish.
Pat the fish dry with paper towels, then season both sides with salt and pepper, dip in the egg, and coat both sides in the almond flour mixture, shaking to remove excess.
Place the fish in the skillet’s heated oil. Allow 2-4 minutes per side to cook, depending on the thickness of the fish.
Transfer to a tray and let aside to cool somewhat before serving.
