Are you sick of making the same old meatloaf recipe? If so, give this a shot.

If you’re not gluten-free, you can use ordinary breadcrumbs instead. The tastes in this were fantastic, especially the Italian undertones. We were really impressed with how well the meatloaf held up; it wasn’t overly dense, it was soft and kept together, and it didn’t crumble when sliced.

I’m also thinking that next time I’ll layer the meatloaf with some sauce and cheese in the middle for even more Mmm. What are your thoughts? Do you make meatloaf in a variety of ways? If you enjoy bland foods, this is the recipe for you. This recipe’s only flavor came from the spaghetti sauce and Italian cheese.

Ingredients

1 pound ground turkey
1 pound ground beef
2 eggs
1 tablespoon gluten-free breadcrumbs
a half teaspoon dried basil
a half teaspoon dried thyme
a half teaspoon dried oregano
1-2 garlic cloves, finely minced
1 grated tiny onion
1 teaspoon of salt
1/4 teaspoon black pepper, ground
1/2 cup grated Parmesan cheese 1/2 cup homemade marinara spaghetti sauce (without the meat)
1/2 cup shredded Italian cheese mixture minced parsley

directions

Preheat the oven to 350°F. Set aside a loaf pan lightly greased with cooking spray (I used a conventional glass loaf dish as shown in the photo above).
Combine the ground turkey and beef, eggs, breadcrumbs, thyme, oregano, basil, garlic, onion, salt, pepper, and Parmesan cheese in a large mixing bowl.
If you overwork the mixture, it will become tough. Form the mixture into a loaf in a prepared loaf pan.
Serve the meatloaf with pasta sauce on top.
Place the filled loaf pan on a baking sheet and bake for 45 minutes to 1 hour in a preheated oven.
Take the meatloaf out of the oven and top with the remaining shredded cheese.
Return the meatloaf to the oven and bake until the cheese has melted.
Allow the meatloaf to rest in the oven for 5-10 minutes before serving/slicing.
If desired, garnish with parsley.(new cooking time added; my average cooking time for 2 lbs beef is 1 hour)
