Ingredients:

  • 4 ears of fresh corn
  • 4 slices of bacon, chopped
  • 1 tablespoon of butter
  • 1 medium onion, diced
  • 2 cloves of garlic, minced
  • 2 tablespoons of all-purpose flour
  • 4 cups of water
  • 2 medium potatoes, peeled and diced
  • 1 teaspoon of Yondu Vegetable Umami
  • 1 teaspoon of dried thyme
  • 1/2 teaspoon of smoked paprika
  • Salt and pepper, to taste
  • 1/2 cup of heavy cream
  • 2 tablespoons of fresh chives, chopped

Instructions:

  1. Start by slicing the corn kernels off the cob and set them aside. Then, take each ear of corn and hold it over a bowl. Use either the back of your knife or a spoon to scrape any remaining pulp and juice from the cobs.

  2. In a large heavy bottomed pot, cook the bacon pieces over medium heat for about 5-8 minutes, or until the bacon is crisp. Use a slotted spoon to remove the bacon and place it on a paper towel-lined plate. Set it aside for later.

  3. Use a clean paper towel to absorb some of the bacon grease, but make sure to reserve about 1 tablespoon of grease in the pot. Add the butter to the pot and melt it over medium heat.

  4. Add the diced onions to the pot and cook them for about 5 minutes, until they are soft and translucent. Then, add the minced garlic and flour, and cook for another minute, stirring often.

  5. While whisking, pour in the water and increase the heat to medium-high. Add in the corn, diced potatoes, Yondu Vegetable Umami, thyme, smoked paprika, salt, and pepper. Stir everything together and bring the mixture to a low boil. Then, reduce the heat to medium-low and let it simmer.

  6. Allow the soup to simmer for 15-20 minutes, stirring every so often, until the potatoes are fork-tender.

  7. Use an immersion blender to blend about half of the soup until it becomes smooth. Alternatively, you can remove about 3 cups of the soup to a blender and blend it until smooth. Stir the blended soup back into the pot.

  8. Finally, add in the heavy cream, reserved corn juice, and about half of the chopped chives. Stir everything together and heat the soup through.

  9. Serve the Hardy Corn Chowder sprinkled with the remaining chives and cooked bacon pieces. Enjoy this delicious and comforting soup!
