  • 3 tbsp. water
  • 1/4 cup light corn syrup
  • 1 cup granulated sugar
  • 1/2 tsp. coarse sea salt

Instructions:

  1. Grease a 9×5″ bread pan with nonstick cooking spray and line it with parchment paper, leaving enough overhang on the sides to easily pull the caramels out later. Set aside.
  2. In a medium glass bowl, combine the butter and heavy cream. Microwave for about a minute and 30 seconds, or until the butter has melted. Stir well.
  3. In a heavy-bottomed medium saucepan over medium heat, combine the water and light corn syrup. Stir in the granulated sugar.
  4. Bring the mixture to a boil, and cover the saucepan for 1 minute.
  5. Remove the lid and insert a candy thermometer. Cook until the candy reaches 320F, about 5-10 minutes.
  6. Pour a small amount of the cream mixture into the candy and stir. Then, gradually add the remaining cream mixture a little bit at a time, stirring after each addition.
  7. Continue cooking until the candy reaches 240F, approximately another 5-10 minutes.
  8. Pour the candy quickly into the prepared pan and let it cool for about 30 minutes.
  9. Sprinkle the top with coarse sea salt, and let the caramel cool for another 3-4 hours.
  10. To serve, pull the caramel out of the pan using the overhanging parchment paper and slice it into 1″ pieces.
