Key Lime Poke Cake

Ingredients
  • 1 box white cake mix, plus ingredients called for on box
For the filling:
  • 1 (14 oz) can sweetened condensed milk
  • 3/4 cup heavy whipping cream
  • 1/2 cup bottled key lime juice
  • Zest from 1 lime
For the topping:
  • 1 1/2 cups heavy whipping cream
  • 1 teaspoon vanilla extract
  • 1/2 cup powdered sugar
Preparation
  1. Prepare and bake the cake according to the package instructions in a 9×13-inch baking pan.
  2. Let the cake cool for 5 minutes, then poke holes all over it with the handle of a wooden spoon, being careful not to poke through to the bottom. Set aside.
  3. In a medium bowl, whisk together the condensed milk, whipping cream, and lime zest until well combined. Add the lime juice and whisk again until thickened. Pour the filling over the cake, using a spatula to spread it and encourage it to fill in the holes. Chill for at least 1 hour, or overnight.
  4. While the cake is chilling, make the topping. In another medium bowl, beat the whipping cream and vanilla extract with an electric mixer until it starts to thicken. Gradually add the powdered sugar and continue beating until stiff peaks form.
