My spouse does the grilling, so that’s taken care of.

But I can’t only offer hamburgers and hot dogs. I’ll need something different to serve. For variety and to ensure that everyone is satisfied, we usually provide a couple pasta salads and a potato of some form. I decided to attempt my Mom’s cucumber salad recipe last year.

Cucumbers, Onions, and Tomatoes Marinated
3 medium cucumbers, peeled and thinly sliced a quarter-inch thick
3 medium tomatoes, cut into wedges 1 medium onion, sliced and divided into rings
a half-cup vinegar
a quarter cup of sugar
1 cup of water
2 tsp salt 1 tsp fresh coarsely crushed black pepper
a quarter cup of oil
1 teaspoon fresh mint, chopped (optional)

  1. In a large mixing basin, combine all of the ingredients.
  2. Toss well to combine.
  3. Chill for at least 2 hours before serving.
