This cowboy meatloaf has become legendary. It’s not just for cowboys and cowgirls, but for everyone who’s a little peckish.

I mean it when I say this meatloaf is totally loaded. It’s a hearty casserole, not simply a meatloaf.

On the bottom comes delicious and meaty meatloaf, and on top is creamy mashed potatoes.

Consider it a hybrid of American meatloaf and English shepherd’s pie.

This is the crossover you didn’t realize you needed.

The meatloaf layer is flavored with sweet honey barbecue sauce and chili powder, creating a delicious blend of sweet and savory flavors with a kick.

The topping isn’t your average mashed potatoes, either. It’s creamy and crunchy at the same time, thanks to bacon pieces and French-fried onions.

1 box Ore-Ida® Steam ‘n’ Mash® Cut Russet Potatoes
1 pound lean ground meat (beef or turkey)
3/4 cup finely chopped onion
1/3 cup bread crumbs, seasoned
1/4 cup Honey SmokehouseTM Jack Daniel’s® Barbecue Sauce
1 gently beaten egg
2 tablespoons chili powder
14 teaspoon of salt
a third cup evaporated milk
1 tablespoon melted butter
1 cup genuine bacon, crumbled
1/4 cup canned crunchy fried onions
2/3 cup shredded Mexican blend cheese
Directions:

  1. Preheat the oven to 375°F. Spray a 9-by-9-inch baking dish with nonstick cooking spray. Combine meat, onion, breadcrumbs, Barbecue Sauce, egg, chili powder, and salt in a large mixing basin. Press gently into the bottom of the baking dish.
  2. Bake uncovered for 20 to 25 minutes, or until thoroughly done. If necessary, carefully drain off any excess fat. Preheat the oven to broil and position the oven rack 6 to 8 inches from the heat source.
