Ingredients:

6 Fresh Sweet Corn Ears
6 tbsp. mayonnaise 12 tsp. garlic powder
1 cup crumbled Cotija cheese
6 Tablespoons Roughly Chopped Fresh Cilantro
1 teaspoon chili powder (chipotle)
2 quartered limes

Instructions:

Preheat the oven to 350°F. Place the corn in its husks on the oven rack. 35-40 minutes, or until fork-tender.
While the corn is cooking, combine the garlic powder and mayonnaise in a small bowl.
When the corn is done, slather it with garlic mayonnaise. Cotija cheese is rolled in.
Garnish with cilantro and chili powder to taste.
If desired, squeeze with fresh lime juice.
