  • 20 ounces of halved maraschino cherries
  • 10 ounces of mini marshmallows
  • 3 cups of sweetened flaked coconut
  • 12 ounces of chopped pecans
  • 1 (8-ounce) package of softened cream cheese
  • 1 (3.4-ounce) package of unprepared instant cheesecake flavored pudding
  • 1 cup of liquid French vanilla creamer

Instructions

  1. In a medium tall bowl, use an electric mixer to whip the cream cheese until smooth. Don’t worry if it binds up in the beaters initially, just keep going and it will loosen up.
  2. Add the dry pudding mix to the cream cheese and beat until well combined.
  3. With the mixer running, slowly add the creamer to the cream cheese mixture. Add about a tablespoon at a time and mix until it becomes a smooth mixture, ensuring that all of the creamer is incorporated. Repeat this process until all of the creamer has been added. Continue to whip until smooth.
  4. In a large bowl, combine the pineapple chunks, halved maraschino cherries, mini marshmallows, sweetened flaked coconut, and chopped pecans.
  5. Pour the cheesecake mixture over the fruit and gently fold it in.
  6. Chill until ready to serve, or serve immediately.
