Pan-Fried Keto Cheesy Focaccia

4-6 servings Ingredients
110g ALMOND FLOUR (1 cup)
60ml (1/4 cup) UNSWEETENED ALMOND MILK
30ml COCONUT OIL (2 tbsp)
CAULIFLOWER RICE 200g (2 cups) PINCH OF SALT
1 CUP SHREDDED CHEESE 120g
Instructions
Combine the almond flour and salt in a large mixing
Pour in the unsweetened almond milk and coconut oil.
Knead the dough until it is smooth, then cover and put aside for 15-20 minutes.
Microwave the cauliflower rice for 5 minutes, then wring off the excess liquid with a cheesecloth or paper towel.
Form the dough into a disk.
Top with two-thirds of the cheese.
Pour in the cauliflower rice and top with additional cheese.
Pinch the dough edges together to seal the filling.
Using a rolling pin, flatten the flatbread.
Heat a little amount of coconut oil in a nonstick or cast iron pan over medium heat. Cook for 5 minutes, then flip and cook for another 5 minutes.
Cut into slices and serve.
