Beef roast pot, also known as pot roast, is a traditional dish cooked by slow-cooking a tough piece of beef in a pot or slow cooker with vegetables and salt. Slow cooking tenderizes the meat and allows the flavors to develop and mingle together.

Here’s a basic beef roast pot recipe:

3-4 pounds beef roast (chuck roast or round roast) – 2 tablespoons vegetable oil – 1 onion, diced – 2-3 cloves garlic, minced – 3-4 carrots, peeled and cut into chunks

  • 2-3 peeled and cut into bits potatoes
  • 1 cup red wine (optional) – 2 cups beef broth (or beef stock)
  • 2 bay leaves – 1 teaspoon dried thyme – to taste salt and pepper
  1. Preheat the oven to 325°F (163°C) or prepare your slow cooker.
  2. Season the beef roast on all sides with salt and pepper.
  3. In a large oven-safe saucepan or skillet, heat the vegetable oil over medium-high heat. Brown the roast on all sides until a good crust forms. Set the roast aside after removing it from the pot.
  4. Place the sliced onion and minced garlic in the same pot. Sauté for a few minutes, or until fragrant and beginning to soften.
  5. Stir in the carrots and potatoes, along with the onions and garlic.
  6. Place the browned beef roast on top of the veggies in the cooker.
  7. Pour in the beef broth and, if using, the red wine. The liquid should reach approximately halfway up the edges of the roast. Combine the bay leaves and dried thyme in a mixing bowl.
  8. If using an oven-safe pot, cover it with a lid or aluminum foil. Place the lid on top of the slow cooker if using one.
  9. Place the pot in the preheated oven or on low heat in the slow cooker.
  10. Cook the beef roast in the oven for 3-4 hours or in the slow cooker for 6-8 hours, or until the flesh is soft and readily shreds with a fork.
  11. Remove the saucepan from the oven or turn off the slow cooker once it has finished cooking. Remove the beef roast with care and lay it on a chopping board. Allow for a few minutes of rest before slicing.
  12. As a sauce, serve the sliced beef roast with the cooked vegetables and some of the cooking liquid.

You can adapt this dish to your liking by adding other veggies such as celery or mushrooms, or by using various flavors and herbs. Enjoy your succulent beef roast pot!
