My father used to prepare something similar, using a jar of pearl onions, half a container of chopped garlic, and a little Worcestershire sauce, then grilling it. So delicious! Potatoes have a soothing effect on me. Mashed potatoes, fried potatoes, or roasted potatoes are all delicious.

My mother has always made a pot roast in the Crock Pot following this recipe. I’ve made a few changes over the years. Pot roast night is usually a big deal in my family. I’m overjoyed since dinner was prepared while I was working!

Preparation time: 15 minutes
Serves 4 to 6 people

1 Ingredient 3 to 4 pound pot roast beef chuck
1 package dried onion and mushroom soup mix
1/2 teaspoon crumbled dried basil or thyme
two bay leaves
1 tablespoon of Worcestershire sauce
4 to 6 peeled entire baking potatoes
6 to 8 peeled and quartered carrots
1 to 2 yellow onions, peeled and sliced into eighths (essential)
12 oz. beer (of your choosing)

  1. Place the meat roast in the bottom of a Crock Pot. Evenly distribute the soup mix and basil (or thyme) over the roast. Place the roast on top of the 2 bay leaves.
  2. Drizzle the soup mix and herbs with the tablespoon of Worcestershire sauce.
  3. Place the roasting potatoes near the exterior edge of the Crock Pot.
  4. Arrange the carrots, quartered, on top of the roast and in the center of the potatoes.
  5. Arrange the onion slices evenly on top.
  6. Pour the beer over everything equally.
  7. Cook for 8 to 10 hours on low or 4 to 6 hours on high.

POT ROAST GRAVY: Transfer the meat and veggies to a platter and keep warm.

  1. Place the beef juices and fat in a large glass measuring cup. Remove any excess fat from the pot juices. 1 1/2 cups juices (add beef broth to equal 1 1/2 cups if necessary). Place the measured fluids in a big pot.
  2. Make a slurry with 1/2 cup cold water and 1/4 cup all-purpose flour.
  3. Pour the slurry into the pot roast juice.
  4. Cook, stirring constantly, over medium-high heat until thickened and bubbling. Reduce the heat to medium and continue to cook and stir for 1 to 2 minutes. Add a few drops of Kitchen Bouquet if desired. Season to taste with salt and pepper.
