Who has time to fret over picky side dishes? Not us. We want a high-impact, simple, tasty dish that will impress everyone without requiring a lot of time or work. We needed a lot of potatoes in this case, so what better method to cook them than to slap them on a baking sheet and let the oven do the work? Make a spice mix with your favorite dry herbs, then add some butter and you’re done! Toss the potatoes in the herbed butter mixture and place them in the oven.

Allow the tots to cook undisturbed for a few minutes – feel free to flip them if you like – then remove your sheet pan from the oven and add the magic ingredient: chicken broth! That’s right, you’re going to add some liquid that will quickly absorb and turn these potatoes into the most delectable, melt-in-your-mouth nibbles you could imagine. It’s easy to see how these received their names!

We broil ours toward the end to achieve that wonderful crispy exterior while preserving the melty, creamy innards, but these are practically hard to mess up. They’re delicious, and the fact that we can feed a crowd with just one simple dish is a huge plus. Don’t let some potatoes throw you a curveball in the middle of your hectic day!

Potatoes that are melting
45 minutes to prepare, 6 servings

INGREDIENTS
3 pounds Yukon gold potatoes or tiny potatoes, peeled and sliced thickly
6 tbsp unsweetened butter
1 teaspoon thyme dried
1 teaspoon rosemary dried
1 tsp. garlic powder
a half teaspoon dried basil
1 cup chicken broth (low sodium)
To taste, kosher salt and freshly ground pepper
Garnish with fresh parsley, if desired.

PREPARATION
Preheat the oven to 475o F and coat a large baking sheet with nonstick cooking spray.
In a large microwaveable bowl, add butter, thyme, rosemary, garlic powder, basil, salt, and pepper and microwave until melted.
Toss the cut potatoes in the bowl with the melted butter until well coated.
Place potatoes in a single layer on a prepared baking sheet and bake for 20 minutes.
cook for 15 minutes, then flip potatoes and cook for another 15 minutes, if desired.
Remove the baking sheet from the oven and flip it again, then carefully pour in the chicken broth.
Return to the oven for another 10-15 minutes, or until fork tender.
Remove from the oven and serve immediately, garnishing with fresh parsley if desired. Enjoy!
