LIST OF INGREDIENTS:

  • 500 g boneless sirloin or ribeye steak, sliced into bite-sized pieces.
  • 4 medium potatoes, cleaned and chopped into 1″ cubes.
  • 2 Tbsp.Of olive oil. I used 4 cloves of minced garlic.
  • 1 teaspoon dried thyme.
  • 1 teaspoon dried rosemary.
  • Season with salt and black pepper to taste. A red bell pepper, cut.
  • A yellow bell pepper, cut.
  • A tiny red onion, cut.
  • Chopped fresh parsley (for garnish).

First Step

Scrub the potatoes and divide them into bite-sized pieces to begin. Maintain the peel for flavor and nutrients.

Second Step

In a large pan, heat 1 tablespoon olive oil over medium-high heat. When the oil is hot, add the steak cubes and sear for two to three minutes on each side, or until browned and cooked to your preference. Remove the steak from the heat and place it on a dish.

In the same pan, heat the remaining olive oil (1 tablespoon). Swirl in the chopped potatoes and garlic, coating them in oil and imparting the garlic flavor. For flavor, season with salt, black pepper, dried thyme, and dried rosemary. Simmer for 10 to 12 minutes, stirring frequently, for a golden brown and completely cooked potato.

To the cooked potatoes in the pan, add the sliced red onion, yellow bell peppers, and red bell peppers. Continue to sauté the vegetables for another 5-7 minutes to soften them and bring out their natural color.
