2 cups unbleached all-purpose flour
1 teaspoon baking powder
1 teaspoon cinnamon
1/4 teaspoon nutmeg
1/4 teaspoon salt
1/2 cup room temperature unsalted butter
granulated sugar, 3/4 cup
2 eggs
1 tablespoon vanilla extract
a half-cup of milk
2 cups chopped peeled apples
1 tablespoon brown sugar
1 teaspoon cornstarch

Whisk together the flour, baking powder, cinnamon, nutmeg, and salt in a medium-sized mixing basin. Place aside.
Cream the butter and granulated sugar together in a separate large mixing bowl until light and creamy.
Stir in the vanilla extract after adding the eggs one at a time, mixing well after each addition.
Slowly stir in the dry ingredients, alternating with the milk, until just mixed.
Toss the diced apples with the brown sugar and cornstarch in a small bowl.
To make this delectable fall dessert recipe, gently mix the diced apples into the batter.

Spoon the batter into the prepared cupcake liners, filling them about two-thirds of the way.
Bake the cupcakes for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
Allow the cupcakes to cool for a few minutes in the pan before transferring to a wire rack to cool fully. These Apple Pie Cupcakes are delicious on their own or with a dollop of whipped cream for a more decadent apple treat.
ENJOY!
