It’s time to fix that with this quick, one-skillet meal that’s better than takeout and done in 20 minutes. I mean, seriously. Who does not enjoy fried rice? Maybe my six-year-old doesn’t like it due of the vegetables inside, but I’m very sure he’s the only one. I chose our favorite little Chinese restaurant for my birthday supper with my family. It was also the bomb. However, their fried rice was delicious. But I kept thinking that I could make it just as well at home, and I’ve been yearning it ever since!

3 cups of cooked white rice
3 tablespoons sesame oil
1 cup thawed frozen peas and carrots
1 small sliced onion 1 teaspoon minced garlic
2 lightly beaten eggs
1 tablespoon soy sauce

Directions
In a large skillet or wok, heat the oil over medium high heat. Mix in the peas, carrots, onion, and garlic. Stir cook until the vegetables are soft. Reduce the heat to medium-low and push the mixture to one side of the skillet, then pour in the eggs and stir fry until scrambled. Now add the rice and soy sauce and thoroughly combine. Fry, stirring constantly, until well hot. Consider adding some green onion.
