A chunk of meat is one of the ingredients.
2 tsp olive oil
4 tbsp vegetable oil (divided) (for steaks)
1 1/2 lbs. Top sirloin (or filet mignon, New York strip, or rib eye) cut into 1-inch chunks
1 medium pound Yukon gold, cut into 3/4-inch wedges* spice blend
1 tablespoon garlic powder, paprika, and brown sugar
2 teaspoons of each powder coriander/cumin/kosher salt, onion
1 teaspoon black pepper, 1 teaspoon chipotle chili pepper
Garlic Butter Sauce (must be made ahead of time!)
2 tbsp unsweetened butter
4-6 minced garlic cloves
1 tablespoon fresh minced parsley or 1 teaspoon dry 1/2 tsp. dry thyme, dry thyme, dried thyme

In a small bowl, combine all of the spice blend seasonings. Take two teaspoons and set aside to use on potatoes. Pat the steak dry and sprinkle with the remaining seasoning mixture while it is still on the cutting board. Throw it to evenly cover it; set it aside.
In a microwave-safe dish, combine the potatoes and 12 cup of water. Microwave for 6-7 minutes, covered (the potatoes should be just soft). Strain it and set it aside to dry. Drizzle a tablespoon of olive oil over the potatoes and season with two tablespoons of the spice combination. Stir to ensure even coverage.In a 12-inch cast iron pan, heat 1 tablespoon olive oil over medium heat. Once hot, add the potatoes and cook for 1-2 minutes, or until they begin to brown. Flip the potatoes and cook for another 1-2 minutes, or until the fork softens. Transfer to a tent plate lined with foil. Wipe the pan clean.
In a now-empty skillet, heat 2 tablespoons vegetable oil over medium-high heat. Once heated thoroughly, add half of the steak to the skillet in a single layer and allow to sear for 2 minutes, then rotate the steak and continue cooking for an additional minute or until desired doneness. Transfer to a plate. If there are any black spots on the pan, wipe them down.

Heat 2 tablespoons vegetable oil over medium to high heat to empty the pan. Once cooked thoroughly, add remaining steak to skillet in a single layer and sear for 2 minutes without boiling. Stir in the steak, followed by the butter, garlic, parsley, oregano, and thyme. Cook for a minute, stirring constantly, before removing from heat.
Stir the steaks and potatoes in the skillet to coat evenly with the butter sauce. To taste, season with extra salt and/or pepper. Put your feet up right away.
