• WOW! This is by far the greatest. My spouse was dubious at first, but now he adores it. Because rice absorbs liquid, I prepare half the rice and put it in half of the soup to enjoy right away, and freeze the other half of the soup without the rice. Then make up and add the rice later when we have the rest. We also add around 3 green peppers, cut into large bits, and more chicken broth as needed.
  • Excellent! It truly tastes like stuffed peppers. I ended up using beef stock instead of chicken broth, added garlic, and used oregano and basil instead of sage and thyme (which I didn’t have). I also put two jalapenos for some heat. It tasted a lot like Stouffer’s stuffed peppers, which I adore. I suppose the next time I’ll add some rice to the bowls as we go instead of the whole pot.

Ingredients:

1 pound LEAN ground beef
1 large onion, chopped…
1 cup uncooked rice or 2 cups cooked rice (I prefer wild rice)
1 can Hunts flavored diced tomatoes (for example, red pepper and fennel, roasted garlic, sweet onion) (14.5oz can)
1 (14.5oz) can tomato sauce
1 teaspoon dried oregano
1 teaspoon basil
12 teaspoon salt 14 teaspoon pepper
1 box (32oz) chicken stock
2 c. water
2 tbsp beef stock powder
3 bell peppers (I use 1 large green pepper, followed by 4-5 red and 4-5 yellow BABY bell peppers)
Optional cheese for topping
Optional garnish: fresh cracked black pepper

Direction:

Brown the growing beef with the onions and rice in a large soup pot coated with cooking spray over medium-high heat. I know it sounds strange, but browning the rice gives it a great nutty flavor – be careful not to burn it!!
Meanwhile, dice your peppers into 12″ pieces and set aside.
Allow to come to a boil after adding the diced tomatoes, tomato sauce, oregano, basil, salt, pepper, chicken stock, water, and powdered beef stock.
Reduce the heat, cover, and simmer for 20 minutes before adding the peppers and cooking for another 20-30 minutes (certain rice varieties may require longer cooking periods).
Serve with optional cheese on top.
