Recipe Details

Ingredients:

  • 1 large hothouse cucumber, sliced into 14 slices
  • ½ cup prepared hummus (more or less, as needed)
  • 4 large hard-boiled eggs
  • Sriracha sauce
  • Fresh cilantro, for garnish

Instructions:

  1. Place the cucumber slices on a serving platter. Top each slice with 2 teaspoons of hummus.
  2. Use an egg slicer or a sharp knife to thinly slice the hard-boiled eggs. Place an egg slice on top of each mound of hummus.

Notes:

  • To make perfect hard-boiled eggs, place eggs in a medium saucepan and cover with water. Bring to a boil over high heat. Once boiling, put a lid on top of the pan, turn off the heat and set the timer for 15 minutes. Drain the hot water and add cold water and ice to the pan. Let the eggs sit in the ice water until completely cooled. Peel and use as desired.
