Ingredients
4 halved medium green peppers
1.5 pound browned ground beef
1 packet taco spice mix, or looking for a fantastic meal recipe for homemade taco seasoning
1 cup water
1 pound cheddar cheese
1 quart sour cream
a half-cup salsa
Directions
Preheat the oven to 350 degrees Fahrenheit. Wash the peppers, then cut them in half lengthwise through the middle and remove the seeds. 1/4 cup water should be added to a casserole dish. Microwave for 7 to 10 minutes, or until peppers are tender. Check for completion on a regular basis.
Meanwhile, brown the ground beef until it is fully done. Cook the taco seasoning and water according to the recipe or package directions. After the meat has been cooked, combine it with the sour cream, salsa, and 1 cup of the cheddar cheese.
Coat a 13 x 9 baking dish with nonstick cooking spray. Fill the dish with cooked peppers and generously load with the meat and cheese mixture. Finish with the remaining cheese. Bake for 20-30 minutes, or until the peppers are heated through and the cheese is melted. Serve with your favorite taco fixings and salsa on the side.
