Taco Bell certainly enjoys playing with our emotions. They remove a popular menu item just to put it back months or years later, but then they remove it again. It’s difficult to let your heart to travel such an emotional rollercoaster. One such thing is their Mexican Pizza. It was taken away, and it was a really difficult period for many people… It’s returned, but for how long? Can we rely on Taco Bell to keep it open for us? I don’t know the answer, but let’s cover our bases as best we can – here’s how to build your own right at home.

This isn’t supposed to be flashy or innovative. This is the closest we can get to Taco Bell’s Mexican Pizza. After all, if it disappears from the menu for good, you’ll want to be able to satisfy your hunger on your own! The good news is that you can easily replicate it in your own kitchen. Flour tortillas, refried beans, ground beef, taco seasoning, enchilada sauce, and cheese are all you need. (Also some toppings if you want to keep it authentic.)

INGREDIENTS
1 pound lean ground beef
1 taco seasoning packet
As required, vegetable oil
8 flour taco tortillas
1 can (15 oz) refried beans
1 can (10 oz) red enchilada sauce
2 cup shredded Mexican cheese mixture
TOPPING REQUIREMENTS:
drained and sliced tomatoes
sliced green onion
PREPARATION
Preheat the oven to 400 degrees Fahrenheit and line a baking sheet with parchment paper.
Brown the ground beef in a large skillet over medium-high heat, breaking it up as it cooks. When it’s done, drain off any excess grease and add the taco seasoning and 1 cup of water to the pan.
Bring to a boil, then reduce to a low heat and continue to cook until the liquid has mostly evaporated.
Heat about 2 teaspoons vegetable oil in a separate clean skillet over medium heat. Cook tortillas one at a time until crispy, 3-4 minutes, flipping regularly. Set aside browned tortillas and add extra oil as needed.
Warm refried beans in the microwave or on the stovetop until they are easily spreadable. Top 4 tortillas with refried beans and ground meat.
Place the remaining tortillas on top, then top with roughly 2 tablespoons enchilada sauce. Add 1/2 cup cheese on top.
Place on prepared baking sheet and bake for 8-10 minutes, or until cheese is melted.
Enjoy with tomatoes and green onions on top!
