Ingredients:

  • 1 cup unsalted butter, at room temperature
  • 1 cup light brown sugar, packed
  • 1/2 cup granulated sugar
  • 1 large egg, at room temperature
  • 1 large egg yolk, at room temperature
  • 1 tablespoon pure vanilla extract
  • 2 cups unbleached all-purpose flour
  • 1 cup rolled oats – quick-cooking or old-fashioned
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon kosher salt OR 3/4 teaspoon regular table salt
  • 3 cups semi-sweet chocolate chips

Directions:

  1. Preheat the oven to 325 degrees F and prepare baking sheets with parchment paper or lightly spray with non-stick cooking spray.
  2. In a large bowl, mix the butter, sugar, and brown sugar until smooth and creamy.
  3. Add the egg, egg yolk, and vanilla to the butter mixture. Mix well until smooth.
  4. In a medium-sized bowl, combine the flour, oats, salt, baking soda, and baking powder. Mix well, then add to the butter mixture. Mix until the flour mixture is fully incorporated. Be careful not to overmix.
  5. Lastly, fold in the chocolate chips until evenly distributed throughout the cookie dough. Again, avoid overmixing.
  6. Drop spoonfuls of cookie dough onto the prepared baking sheets, spacing them 1 1/2 to 2 inches apart.
  7. Bake on the middle rack of the oven for 12-17 minutes, depending on the size of the cookies. They should start to turn light golden brown with slightly dark edges.
  8. Remove the cookies from the oven and let them cool for a few minutes before transferring them to a cooling rack. Enjoy!
