1 can (15 oz.) black beans

1 can (16 oz.) low-fat refried beans

1 pound thick corn tortilla chips

2 diced Roma tomatoes

1/2 cup sliced pickled jalapeos

1/4 cup sliced black olives

1 (8-ounce) container shredded Cheddar or Monterrey Jack cheese

2 to 3 chopped green onions

1/4 cup chopped cilantro

a quarter cup salsa

1–2 teaspoon cumin, to taste

2 to 3 tbsp chili powder (to taste)

Season with salt and pepper to taste.

Serve with guacamole, salsa, and sour cream.

Preheat the oven to 400 degrees Fahrenheit.
Cook the ground beef and chopped onion in a large skillet over medium heat, stirring periodically to brown the meat and cook the onions.
Season the ground beef with salt, cumin, chili powder, and black pepper as it browns. Excess grease should be drained.
Stir in the black and refried beans with the ground meat. 14 cup salsa should be added. Mix the ingredients thoroughly.
To taste, add additional cumin and chili powder. Cook for 5 minutes, stirring occasionally.
Spread the chips out on a baking pan. The ground beef mixture should be spooned and sprinkled over the chips.
Top nachos with diced tomato, sliced jalapenos, black olives, and the green onion bottoms, chopped. Cheese should be sprinkled on top.
Place the baking sheet in the oven for about 15 minutes, or until the cheese is melted and the nachos are heated through.
Remove from the oven and sprinkle with cilantro and chopped green onion tops.
Serve with guacamole, salsa, and sour cream.
