A wonderful and savory second course that the whole family will enjoy is pan-fried potato cake. It takes only a few minutes to prepare and is an excellent fridge emptyer: we filled it with cooked ham and mozzarella, but you may modify the cured meats and cheeses according to your preferences or what you have on hand. Use red potatoes and, after finely shredded, squeeze them well to remove most of their vegetative water for an exquisite end outcome. The main challenge with this cake is turning it upside down, but if you have a double omelet pan on hand, it will be a piece of cake. You may also make a vegetarian version by omitting the ham. Pan-fried potato cake recipe

Step 1

Peel the potatoes, grate them using a large hole grater, and season with a pinch of salt.

Step 2

Squeeze them thoroughly to remove as much vegetative water as possible2, and then carefully dry them.

Step 3

Incorporate the flour3and season with a pinch of minced rosemary to taste.

Step 4

In a nonstick skillet, heat a sprinkle of oil, then distribute half of the potato mixture on the bottom4.

Step 5

Cut into slices, stuffed with ham and mozzarella5.

Step 6

Compact well6 with the remaining potato mixture. Cook for 6-7 minutes on high heat, then reduce to low heat, cover, and cook for another 15 minutes.

Step 7

Turn the cake over down, using a lid7 to help you, and continue to cook for another 7-8 minutes.

Step 8

Transfer the potato cake to a serving plate, season with salt and pepper, then season with rosemary before serving piping hot and stringy8.

If you want a more omelette-like finished product, add 1-2 eggs to the potato mixture.

Replace the 00 flour with rice or chickpea flour to make a gluten-free alternative. You can also add a pinch of spices like turmeric, sweet paprika, or curry if you choose.

You can use fresh fiordilatte instead of mozzarella for pizza: cut it into slices and drain it in a strainer for at least an hour. The cheese must be completely dry.
