2 pounds baby yellow potatoes

2 tablespoons olive oil

2 minced garlic cloves

1 teaspoon dried thyme

1 tablespoon dried rosemary

1 teaspoon dried oregano

1/2 teaspoon salt

14 teaspoon black pepper

1/2 cup Parmesan cheese, grated

2 tbsp chopped fresh parsley (optional garnish)

Instructions:

Depending on their size, cut the baby yellow potatoes into halves or quarters. Keep them whole if you prefer. Place in the slow cooker.

Combine olive oil, minced garlic, dried thyme, rosemary, oregano, salt, and black pepper in a separate bowl.

Drizzle the seasoned oil over the potatoes, making sure they are well coated.

Cover the slow cooker and cook on high for 2-3 hours or low for 4-6 hours. Give it a good shake every now and again.

Sprinkle with Parmesan cheese once the potatoes are tender and fully cooked. Mix until the cheese has melted and evenly coated the potatoes.
