Three Cheese Quiche

I have a special place in my heart for quiches. It reminds me of my childhood when my mother trusted me enough to make my own dish. I can still picture the recipe card placed on the counter, urging me to prepare a quiche for dinner. With simple steps of chopping and stirring, quiche is a recipe that anyone can master!

Most quiches start with three basic ingredients: a pie crust, heavy cream (or half and half), and eggs. From there, the possibilities are endless! You can add meats, veggies, and cheeses to create your own unique flavor. But for today’s recipe, let’s indulge in a classic three cheese quiche. Who can resist the combination of ridiculously cheesy eggs and a flaky pie crust?

To add a little color and extra flavor, we’ll throw in some chopped yellow and green onions. If you’re cooking for picky eaters who won’t touch onions, consider adding chopped ham or broccoli instead. The options are limitless!

Although I mostly enjoyed quiche for dinner as a child, there’s no wrong time to serve this dish. It’s a staple in brunches, and I’ve been guilty of sneaking a slice for lunch, be it hot or cold. This cheesy quiche is absolutely delicious!

Recipe

Ingredients
  • 1 pre-made refrigerated pie crust
  • 6 eggs
  • ¾ cup heavy cream
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ cup cheddar cheese, shredded
  • ½ cup mozzarella cheese, shredded
  • ½ cup Swiss cheese, shredded
  • ¼ cup yellow onion, diced
  • 2 ½ tablespoons green onions, chopped
Instructions
  1. Preheat your oven to 375°F (190°C) and remove the pie crust from the fridge.

  2. In a large bowl, whisk together the eggs, heavy cream, salt, and pepper.

  3. Add the cheddar cheese, mozzarella cheese, Swiss cheese, and onions to the egg mixture. Stir until everything is well combined.

  4. Roll out the pie crust and press it into a 9-inch (23 cm) pie dish. Crimp the edges with a fork if desired.

  5. Pour the egg mixture into the prepared pie crust and bake for 38-40 minutes, or until the quiche is fully set in the middle.

  6. Allow the quiche to cool for 8-10 minutes before serving. Enjoy it warm or at room temperature!
