When I have an abundance of tomatoes, this is the first recipe I turn to. It’s similar to Stuffed Peppers, except the tomatoes remain cool and fresh–no baking required. Each one is filled with spiced ground beef, browned onions, a bit of rice, and the insides of the hollowed-out tomatoes for a quick, inexpensive dinner that everyone enjoys.

•4-6 medium-sized tomatoes

•1 pound ground beef

•Two tbsp taco seasoning

•4 cups spinach, chopped

•1/2 cup corn, fresh or frozen*

•1 tablespoon coriander, chopped

  1. Preheat the oven to 375 degrees Fahrenheit.
  2. Remove the tops of the tomatoes and scoop out all of the pulp. Place in a baking pan.
  3. In a big skillet, brown the minced beef. Once cooked, season with taco seasoning.
  4. Stir in the spinach and corn. Cook until the spinach wilts, then thoroughly combine everything.
  5. Fill the tomatoes halfway with the beef mixture. Fill the bottom of the baking dish with any excess beef.
  6. Top with cheese.
  7. Bake for 15 minutes, or until the cheese melts. Serve with coriander.
